Ingredients for 3 salads

  • 6 cups of greens (used 10 oz container of Organic Girl Super Greens)
  • 1/2 small onion diced (used locally grown Maui onion)
  • 3 cooked beets sliced (used Love Beets)
  • 15 mini tomatoes (used locally grown Sensei mini tomatoes)
  • 6 hard boiled eggs halved
  • 1 cup of 4 bean salad (used Paisley Farm Four Bean Salad)

Instructions

  1. Boil your eggs and cool. You can prepare them ahead of time and have them in your fridge for when you’re ready to assemble your salads.
  2. Get 3 meal prep containers and split the greens between them (approximately 2 cups each).
  3. Top with equal amounts of the rest of the ingredients.
  4. Cover, refrigerate, and enjoy for lunch or dinner!
