
I came to the realization that I eat a lot of eggs. Usually sunny side up with a side of something else, or boiled and tossed into a salad. There was even a time when I went through a pesto egg phase, after seeing it on social media. I kind of forgot about those pesto eggs, but remembered them quickly when I was staring at a jar of basil pesto in my fridge that I had bought from Costco. Paired with the yummy sourdough bread I had on hand and the roasted red peppers in my fridge, I quickly made a delicious breakfast…pesto egg toast topped with red peppers!

Basil Pesto
If you’ve got time and fresh basil, I recommend making your own. It’s not hard, if you have a blender or food processor. If you’re looking for a recipe, you might be interested in checking out the Basil Pesto, Tomato, and Cucumber Sandwich post, which has a pesto recipe.
You can also pick up a bottle of pesto at the supermarket. I like the one from Costco.

What else can I eat with basil pesto?
Basil pesto is commonly eaten with pasta. Mix it with your favorite Capellini or Fettuccine, and some shrimp and veggies for a delicious meal.
It’s also great with potatoes, gnocchi, on pizza or flatbread, and on veggies or meat. With all these options, the big bottle from Costco becomes less scary!
What ingredients did I use for this recipe?
Most of the ingredients for this recipe were purchased from my local Costco store.
Let’s start with the bread. I used La Tour sourdough bread, which comes sliced. La Tour is a local bread company in Hawaii. They make all kinds of bread, including Shokupan and a delicious Sprouted Bread. Their Sourdough is one of my favorites!
Second, we already talked about the basil pesto coming from Costco. The eggs were also from Costco and came from Waialua Fresh Eggs, a local egg farm in Hawaii. Read more about Waialua Fresh Eggs at Costco here.
The fire roasted red peppers also came from Costco. The brand’s name was Del Destino.

Delicious and easy to make, this will take your toast to the next level!
Ingredients
- 1 Tbsp basil pesto
- 2 eggs
- 1 slice of sourdough bread
- roasted red peppers
Instructions
- Put basil pesto in a small pan on medium heat. Spread the pesto around a little bit in the pan.
- Crack your eggs on the pesto and cook them sunny side up.
- Toast your slice of sourdough bread.
- When the bread is done toasting and eggs are cooked, place eggs on the bread.
- Top with roasted red peppers.
