Avocado with Feta and Tomato

There is no better feeling than cutting into a perfectly ripe avocado. It’s buttery and scoops out like softened ice cream.

For some avocado inspiration, I turned to google and found a recipe on Martha Stewart’s website called “Avocado Halves Stuffed with Tomato and Feta.” Her recipe called for 1 avocado, 1 small ripe tomato, 1 tablespoon crumbled feta cheese, 1 tablespoon freshly squeezed lemon juice, 1 teaspoon fresh chives chopped, 2 teaspoons raw sunflower seeds, and salt and freshly ground pepper.

After cutting the avocado in half, you top it with the tomato, cheese, and everything else. Simple and easy! It sounded like the perfect, stress-free preparation.

I followed the recipe but used lime juice instead of lemon and omitted the chives and topped with a little bit of cilantro. It was delicious! I have to credit the buttery avocados, fresh Kamuela tomatoes, cilantro, and lime that came from Foodland Kahala MKT. I also used their in-house Maika’i brand sunflower seeds.

For the second avocado half, I tried topping it with a splash of balsamic vinegar instead of lime, and I enjoyed that as well.
