I recently bought a bag of Siete Grain Free Tortilla Chips from Costco. This was my first time trying these gluten-free and paleo chips. I decided to use them for an easy no meat nachos recipe.

I preheated the oven to 350 degrees. After pouring the chips on a baking sheet lined with parchment paper, I topped it with the following ingredients:

  • shredded Cheddar Jack cheese (1 1/2 bags)
  • Pinto Beans (1 can rinsed and drained)
  • canned corn (1 can)
  • 1/2 a diced onion

The nachos were put in the oven for 10 minutes until the cheese was melted. Upon removing from the oven, it was topped with the following:

  • 1 diced tomato
  • 1 can of sliced olives
  • guacamole
  • sour cream
  • jalapeno
  • cilantro
  • salsa
  • fresh lime juice

I would say this was a huge hit with everyone! This is the perfect dish to make when entertaining friends and family. It was the perfect amount of food for 5 adults. Although I did not include meat in this dish, meat could easily be added to it.

Let me know in the comments what your favorite topping is for nachos!
