I recently bought a bag of Siete Grain Free Tortilla Chips from Costco. This was my first time trying these gluten-free and paleo chips. I decided to use them for an easy no meat nachos recipe. These vegetarian nachos are delicious, satisfying, and easy to make!
I preheated the oven to 350 degrees. After pouring the chips on a baking sheet lined with parchment paper, I topped it with the following ingredients:
- shredded Cheddar Jack cheese (1 1/2 bags)
- Pinto Beans (1 can rinsed and drained)
- canned corn (1 can)
- 1/2 a diced onion
The nachos were put in the oven for 10 minutes until the cheese was melted. Upon removing from the oven, it was topped with the following:
- 1 diced tomato
- 1 can of sliced olives
- guacamole
- sour cream
- jalapeno
- cilantro
- salsa
- fresh lime juice
I would say this was a huge hit with everyone! This is the perfect dish to make when entertaining friends and family. It was the perfect amount of food for 5 adults. Although I did not include meat in this dish, meat could easily be added to it.
